When I think of summer desserts, a fresh fruit cobbler is definitely on that list! Sadly, this year I missed the ollalieberry picking season, but I was not about to let that stop me from making a fresh fruit cobbler. And, I happened to have a bowl full of ripe peaches!!

You’re going to need lots of extra napkins with these Blue Cheese BBQ’d Ribs, and don’t you even think of using a fork to eat these. Pick them up and dig in!
It’s hard to know where to start in describing these ribs….. they’re seasoned with lots of BBQ spice, baked slow until they’re fall off the bone tender, drenched in sauce and finished on the grill, and then topped with big chunks of creamy blue cheese. Forget whatever sides you thought you’d serve alongside these, because everyone is just going to want a big ole plate of these ribs!

This might be a favorite new side dish of mine. Pineapple fried rice could be a vegetarian entree, but if you’re like me, you’re going to serve it as a side dish. It goes well with grilled teriyaki chicken, grilled shrimp, steak, hawaiian meatballs, and even brown sugar ham or pulled pork sandwiches.

Is your garden overflowing with fresh basil? Or maybe you have a farmer’s market near you? Either way, making pesto is quick, easy, delicious, and perfect to make ahead and freeze. I love making big batches of my Basil Pesto (make it and freeze it)! Dig through my freezer and I’m sure you’ll find multiple zip-locks bags full of pesto cubes. Yep, cubes! Doesn’t your pesto come in cubes? It will if you freeze it in ice cube trays!!
Mama likes cornbread, cornbread, cornbread…….Oh yes I do!! I pretty much love corn anything!! Fresh corn on the cob, roasted corn salad, corn cookies, corn cakes, corn chowder, cornmeal pancakes, and, of course, plain ole cornbread. This however, is not plain ole cornbread!!!
The cornbread should really be called corncake, because it’s sweet and rich and moist. There is no need to serve it with butter or honey. Just plain, just plain sweet corncake!!
Does your crockpot sit in the cupboard and gather dust or are you a huge fan and use it all the time? I’m somewhere in-between. I have a handful of recipes that I cook only in my crockpot. Tortilla soup, traditional chili, sweet potato chili, and pulled pork. I need to acquire a few more slow cooker recipes, so if you have a favorite, feel free to share it with me.

I have no idea where I originally got this recipe. It’s been years (same with my bundt pan). But every once in a while, you need to pull out the old recipes and remake them. I’m glad I did!
