I know that you’re all probably thinking, what does an “empty-nester” know about being a busy mom? Well, let me tell you, I do remember, and it’s hard!

I feel like we grill chicken all
summer year long. We love it, but I tend to either use a teriyaki marinade or season it with my BBQ Spice Blend and BBQ sauce. Same old grilled chicken, served with different salads and sides. Well, the other night, I decided it was time to change up the chicken marinade a little. I made up a quick Lemon Dijon Marinade and it turned out delicious.
To say that I have an addiction to cupcake liners and fancy straws, might be an exaggeration, but not by much! I can’t help myself, I just love turning the ordinary into something a little more fun!!
I’m pretty picky about Kale salads. I’ve ordered plenty in restaurants and I just don’t love ’em. This Tuscan Kale Salad however, is perfect! It’s lemony, garlicy, slightly salty from the fresh grated parmesan, and the homemade breadcrumbs are full of flavor. If you’re not sure you like kale salads, you need to give this a try!
You’ve got to love when your daughter and her boyfriend come to town for the weekend and he spends the morning out fishing! Ahhhh, I love these fresh caught benefits!! They head out fishing in hopes of catching a boatful of salmon, but the salmon seemed to escape their bait. However, the Ling Cod, were not as smart! All four fisherman caught their limit!! Thank you very much!
I’ve been blessed with a sister that picks berries and makes jam every year!! More importantly she blesses me and my family with her unconditional and friendship, but let’s not dismiss the fact that I always have a few jars of homemade jam!! And it’s delicious jam!!
There’s nothing like a serving of old fashioned Banana Pudding! It really is quite old fashioned with the ingredients: pudding, vanilla wafers, bananas. So simple, yet so delicious! Can’t you just picture your grandmother making a bowl of Banana Pudding for dessert? I don’t know know if my grandmother actually ever made Banana Pudding, but just saying that gave me a visual of my grandmother, in the kitchen, wearing her floral apron. She always wore an apron! It really is one of my most vivid memories of her. I wear an apron, maybe a dozen times a year; when I cook a holiday meal, when my grand babies are here and we’re cooking together (because aprons are fun!), and when I whip whipped cream (that was today!). It just seems to splatter everywhere!!
There’s nothing like sitting outside on a beautiful evening, dining on a simple, yet delicious dinner!! Even better when you share it with someone you love!
My husband had been out of town for a few days, arriving home right around dinner time, it was a beautiful day, so I figured we’d sit outside to eat. Sounds like a good plan right? But, isn’t there a saying about the best plans? Something like the “best laid plans don’t always work out?”
Dinner was going to be a simple, yet delicious Grilled Skirt Steak Salad with a homemade Creamy Blue Cheese Dressing.
Brussel Sprouts are not the enemy!! As a child, like me, did you think you hated brussel sprouts? Blechh! I probably still would if I were forced to eat them boiled to death like our veggies were when I was a child. Fast forward, many many years, and I now love brussel sprouts! You just have to know how to cook them. My husband still isn’t a huge fan, but his loss is my gain. When I make them (which isn’t often since I know he really doesn’t like them), I get to enjoy them for dinner, and then the leftovers for lunch. It’s a total win for me!!
My go to cooking method has been to roast them, with just a little olive oil, salt, and pepper, but I was talking with my daughter and she was telling me about the brussel sprouts her husband had recently made. Cast iron skillet, onion, bacon……… I was sold and knew I had to give them a try!
And you learn something new everyday! I was wondering why the spell check kept underlining the word “brussel” sprouts, so I looked it up. Well dang if it isn’t BrusselS sprouts. Seriously, I’ve been saying it wrong all these years? Feeling a bit foolish now, let me tell you about this Brussels sprouts recipe….
There’s nothing fancy about this post, in fact we’ve all had Root Beer Floats! Aren’t they a part of growing up, like baseball and apple pie? I think so! We enjoyed them recently, so I thought I’d give a little “shout out” to the plain old, nothing fancy Root Beer Float!
