Quinoa Caprese Salad
  • 1 basket (approx 2 cups) cherry tomatoes (halved)
  • 1 tub marinated mozzarella balls (halved)
  • 1 cup fresh basil (rough chopped)
  • 1 cup quinoa (cooked according to pkg directions)
  • ¾ cup Newman's Own Balsamic Dressing
  • Fresh cracked pepper to taste
  1. Cook 1 cup quinoa according to pkg directions, set aside to cool.
  2. In the meantime, halve the tomatoes and mozzarella balls.
  3. Mix cooled quinoa with dressing, tomatoes, cheese, and basil.
  4. Add a little more dressing if needed.
  5. Add fresh cracked pepper to taste.
  6. Place in refrigerator until serving.
  7. **If you aren't serving the salad right away, I suggest adding basil right before serving as it tends to brown a little.
