Fair Corn (in a cup)
  • 8 ears fresh corn (yellow or white)
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • ⅛ tsp ancho chili powder
  • ¼ cup cotija cheese
  • 2 limes
  • cilantro
  • salt & fresh cracked pepper
  1. Husk corn and lightly drizzle with olive oil.
  2. Sprinkle on a little BBQ spice or salt/pepper/garlic.
  3. Grill over med/high heat (directly on grill) for about 10 minutes.
  4. Once cooled, cut kernels from cob.
  5. While corn is grilling, make sauce.
  6. Combine mayonnaise, sour cream, ⅛ tsp ancho chili pwd, ¼ cup cojita cheese, dash of salt and pepper, and juice from one lime.
  7. Mix corn into sauce.
  8. Serve with a lime wedge and topped with chopped cilantro, extra cojita cheese and another dash of chili powder (optional).
