Buttermilk Biscuits

  • 1 cup bread flour
  • 1 cup all purpose flour
  • 1 TBSP baking soda
  • 1½ tsp baking soda
  • 1½ tsp salt (1 tsp goes into batter, ½ tsp gets sprinkled on top at end of baking)
  • 2 TBSP sour cream
  • ¾ cup butter (FROZEN)
  • ½-3/4 COLD buttermilk
  • 1 TBSP melted butter
  1. Preheat oven to 450•
  2. Combine flours, baking powder, baking soda, 1 tsp.salt, and sour cream in large mixing bowl.
  3. With a cheese grater, quickly grate the frozen butter into the flour mixture.
  4. Using a pastry blender (or fork) cut the butter into the flour mixture until it resembles a coarse meal.
  5. Add the buttermilk a little at a time, stirring just until it clumps together and is no longer crumbly.
  6. DO NOT overmix.
  7. On a floured surface hand press the dough into a round 1" thick disk.
  8. Using a round cookie cutter (or glass) cut into circles and place on a sheet pan (or in a cast iron skillet).
  9. Bake for 15 minutes, or until slightly brown.
  10. Brush with melted butter and lightly sprinkle with remaining salt.
  11. Bake for another 5 minutes.
  12. Yield depends on size of biscuits (approx 8).
