Thai Peanut Sauce

Ingredients
  • ½ cup peanut butter (I used creamy because that's what I had, crunchy would be fine also)
  • 1 cup coconut milk
  • 1½ TBSP Thai red curry paste
  • 1 TBSP soy sauce
  • ¼ cup dark brown sugar (lightly packed)
  • juice of one lime
  • pinch of salt
  • *Optional: peanuts (chopped for garnish)
Instructions
  1. Combine all ingredients (except lime juice & chopped peanuts) in small sauce pan over med/low heat.
  2. Stir or whisk until smooth.
  3. Heat until smooth and peanut butter is melted.
  4. Serve slightly warm or cool.
