I do sprinkle the zucchini/squash with salt, let sit for at least 15-20 minutes to get the excess water out and blot with paper towel before putting together. Actually having this tonight!

Was delicious! Now adding sweet potato as well as I have one on hand. I omit zucchini as I don’t like it’s texture also omitted tomatoes as I haven’t got many on hand. Makes a great side dish!
