Ingredients

  • 1 & 3/4 cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1 tsp pumpkin pie spice or 1/2 cloves, 1/2 nutmeg
  • 1/2 cup dark brown sugar
  • 2 large eggs
  • 1 cup pumpkin puree not pie filling
  • 1/2 cup vegetable oil
  • 1/3 cup milk
  • 1 tsp vanilla

Instructions

  • In stand mixer, mix the brown sugar and eggs until combines.
  • Mix in the pumpkin, oil, milk, and vanilla.
  • Slowly add in the dry ingredients (flour, baking soda, baking powder, salt, and spices) and mix until just combined. Do not over mix.
  • Spoon the batter into prepared cupcake tins.
  • Bake at 350• for 16-18 minutes.
  • Cool on wire rack.
