Sweet Potato Chili

Ingredients

  • 1- 28 oz can crushed tomatoes
  • 1- 14 oz can diced tomatoes
  • 2 TBSP chili powder
  • 1 TBSP ground cumin
  • 2 tsp smoked paprika
  • 1 TBSP brown sugar
  • 1/2 tsp salt
  • 2 large sweet potatoes** peeled and cut into 1" cubes **I use the light colored sweet potatoes
  • 1 medium onion peeled and chopped
  • 2 cloves fresh garlic crushed
  • 1- 15 oz can kidney beans drained & lightly rinsed
  • 1- 15 oz can black beans drained & lightly rinsed
  • Optional: add 1 lb. browned ground beef or ground turkey
  • Toppings: seeded & topped fresh tomatoes chopped cilantro, diced red onion, grated cheddar cheese, Fritos corn chips, cubed avocado, sour cream.

Instructions

  • Place all "chili" ingredients (canned tomatoes –>canned beans) into slow cooker.
  • Add cooked ground meat if desired.
  • Stir until everything is well combined.
  • Cook on low for 8 hours (approx. 6 hours on high). *It takes quite a while for the sweet potatoes to fully cook and become soft.
  • Serve with toppings!
