Oatmeal Peach Muffins

Ingredients

  • 1 1/4 cup flour
  • 1 cup oatmeal quick cooking
  • 1/4 cup brown sugar
  • 1 TBSP baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 egg
  • 1 egg white
  • 1 cup vanilla greek yogurt
  • 1/4 cup honey
  • 2 TBSP vegetable or canola oil
  • 1 tsp vanilla
  • 1 large peach /1 cup peeled, pitted, and small diced

Instructions

  • Preheat oven to 375*
  • Spray muffin tin or use liners.
  • Whisk together in small bowl: eggs, yogurt, honey, oil, and vanilla until well blended.
  • In a larger bowl, combine together dry ingredients: flour, oatmeal, brown sugar, baking powder, baking soda, and cinnamon.
  • Stir wet ingredients into dry, do not over mix.
  • Gently fold in diced peaches.
  • Pour batter into 12 muffin cups.
  • Bake for 20 minutes or until inserted toothpick comes out clean.
  • Cool on wire rack.
