Halloween Lunch for Your Little Ones

I’ve been doing a lot of Fall Tablescapes, but hadn’t done anything for the little ones yet, so………here you go……Halloween Lunch for Your Little Ones! Do you have fun traditions that you do with your little ones on Halloween? The past few years we’ve been hosting Trick-or-Treat from our house. Chili is the typical meal for the grown ups and I always do something a little more fun for the little ones. There’s a link at the bottom of this post where you might get a few ideas to feel your little ghosts and ghouls this Halloween. In the meantime, let’s talk about a little lunch for the kiddos. I mean, seriously what little one isn’t going to want to sit down and eat when their lunch is as Spook-tacular as this!! I picked up the ghost plates at Home Goods earlier in the season and used my Hearth & Hand black plates from Target as a charger. I’ve had the polka dot runner for a few years and love getting to pull it out and use it for Halloween. I knew it had to be on the table for the Halloween Lunch for Your Little Ones. Lunch was simple and somewhat healthy! Grilled cheese sandwiches (cut into strips), fresh grapes, carrots w/ranch dip, and a Gogurt. Apple juice or milk were the beverage choices and of course, I used my milk bottles with a fun straw. One Gooey Sprinkle Cookie (with Halloween sprinkles) was plenty for dessert.

I picked up these Halloween Sticker Books from the dollar section at Target and they were the perfect party gift! I don’t think I’ve ever met a little one that doesn’t like stickers!

This Halloween Lunch for Your Little Ones was simple and fun to put together, and the best part is that the kids loved it!!!!

Trick-or-Treat 2014

Trick-or-Treat!! As I was prepping for tomorrow’s trick-or-treat, I realized I never posted anything about last years Halloween party. For the adults, we always serve chili with all the toppings, cornbread, and a simple salad. I’ll be doing the same this year. I always have a little more fun with the menu for the kiddos………..

Last year, our little princesses and ghouls dined on eyeball pasta, green slime, mummy dogs, and monster juice. Everything was simple to make, fun, and they kids filled their tummies before they headed out (in the rain) to Trick-or-Treat. Win-win!!

And, yes, we do pass out cotton candy!!

My husband and I aren’t big on dressing up, so we usually throw on some Giant’s gear. We had two of our grand babies here last year, Tom Brady and Princess Sofia. Joining them last year were a few cousins, Tinkerbelle, Elsa, and Mike from Monsters Inc.

Gotta run now, lots of prepping to get done. A little princess butterfly and Peyton Manning will knocking on my door in a few short hours!!

DaBomb Burger with Balsamic Onions

My DaBomb Burger with Balsamic Onions, double cheese, a toasted bun, and Donkey Sauce was inspired by my grandson and Guy Fieri. According to my grandson, it was “DaBomb!!”Most kids when they “earn” a reward they get an ice cream or maybe a small toy. Well, Beckett, being the 6 year old foodie that he is, has a love for cookbooks (along with soccer, basketball, tennis, swimming, baseball, and even school, and reading). Without a doubt he’s a lucky little boy to have the opportunity to participate in so many activities. Anyways, back to the cookbook. On his soccer team this year, they’re learning about playing positions (not swarming like a pack of bees). He’ll take you down on defense, but was holding back a little on offensive, so in a weak moment, his Dad said, “B, if you can score a goal today, you can pick out a new book.” Well, going to the bookstore meant one thing……..a new cookbook! He went for his favorite Food TV Star and picked out Guy Fieri’s book, “Guy on Fire.” And so, dinner at Nana’s meant he could pick out what we’d be having. He went for Guy’s Straight Up Burger, with Nana modifications of course.

This picture of him cracked me up. We were all in the house, and he was sitting outside, in the shade, reading through his new book. Of course, I had to grab my phone and snap this pic.

We knew we wanted to grill our burgers, we knew we wanted to try Guy’s Donkey Sauce, and I knew I wanted balsamic onions. Turned out to be the perfect combination of flavors. And that is the long winded story of B and his cookbook and how our DaBomb Burger with Balsamic Onions got their name!

Balsamic Onions are simple to make, although they do take nearly an hour of time. You need to slowly cook the onions until they’re tender, then add the balsamic and sugar and continue cooking until they’re caramelized and sweet.

While the onions were caramelizing, we cooked the bacon and roasted two heads of garlic. It just keeps getting better folks! Crispy bacon, sweet Balsamic Onions, fresh produce and a bowl of Donkey Sauce.

Did I mention the seasoned ground beef, double cheese, and toasted buns?

This was DaBomb!!

DaBomb Burger with Balsamic Onions

Author Joy in Every Season

Ingredients

Ground beef approx 1/4 pound per burger
salt & pepper
2 slices american cheese per burger
Balsamic Onions:
3 yellow onions thinly sliced
1 TBSP butter
1 TBSP olive oil
salt & pepper
1 TBSP sugar
1/4 cup balsamic vinegar

Instructions

Balsamic Onions:
Thinly slice yellow onions.
Heat med saute pan over med/low heat and add 1 TBSP butter and 1 TBSP olive oil. Add sliced onions.
Add 1 tsp each salt and pepper.
Cook over med/low heat for approx. 20-30 minutes or until onions are translucent and tender, and just beginning to turn a light golden brown.
Add sugar and balsamic vinegar and continue to cook over low heat for another 20 minutes, until onions are dark in color and sweet.
Burger:
Season meat with salt and pepper. Divide into equal size patties (size depends on bun size).
BBQ as you would normally BBQ a burger. Top with 2 slices of american cheese.
To prepare DaBomb Burger:
Lightly toast buns on buttered grill pan.
Generously spread Donkey Sauce on bottom bun, add burger, add shredded lettuce, and tomato slice. Top with a balsamic onions (don't be shy, they're yummy).
Spread more Donkey Sauce on top bun and place on top of bottom burger stack.
Get lots of napkins and enjoy!!

Kids Easy Cheese Pizza

Some nights call for quick and easy dinners, especially when it’s going to be cooked by a 6 year old. My grandson was spending the night with me, and I knew that after a day of school and a hot (90*) soccer practice, that by the time he got to me, he’d be hot, tired, and hungry. I knew he’d want to help cook and I know he loves pizza, so I figured I’d let him make it. This Kids Easy Cheese Pizza was something he could do entirely by himself!
I took every short cut there was to take, which worked perfect on this particular evening.

After lightly oiling the cast iron skillet, B pressed the pizza dough into the pan. Next came the sauce. After carefully saucing the entire crust, he sprinkled it with garlic powder and plenty of parmesan cheese. Lots of colby jack and mozzarella topped it off, then into a hot oven it went.

Sweet boy, was seriously so hungry, every few minutes he asked if it was done. I might have let it go a couple more minutes, but he said it looked just perfect, and since he gave me one more, “I’m hungry,” I figured it was time to eat. Besides, we had a movie and popcorn date waiting for after dinner

Funny thing though, he’s such a little foodie, that halfway through eating, he say’s to me, “you know Nana, we should have made “real” homemade pizza!” This is coming from a boy who loves cooking with his dad and the last pizza they made (which I heard he devoured) was roasted brussel sprout with caramelized onions and goat cheese. Go figure!!

Seriously though, this Kids Easy Cheese Pizza is a perfect quick meal to let your kids help with and I promise you, they’ll love cooking with you as much as they love the pizza!!

Kids Easy Cheese Pizza

Ingredients

1 PIllsbury Pizza Dough
1/2-3/4 cup pizza sauce
1 tsp garlic powder
1/4 cup grated parmesan
1 - 1 1/2 cup grated mozzarella cheese I used mozzarella and colby jack

Instructions

Lightly oil large cast iron skillet.
Press pizza dough into skillet.
Spread pizza sauce over dough.
Sprinkle with garlic powder.
Sprinkle with parmesan cheese.
Top with 1 - 1 1/2 cup grated mozzarella cheese.
Bake at 425* for 19-23 minutes or until crust is golden brown and cheese is melted.
