I apologize to all the vegetarian, gluten free, etc, healthy eaters, but once in a while you just have to have a hot dog!! Yes I did. And yes, I wrapped it in bacon and grilled it! And yes, it was delicious! I can blame it on my husband and the fact that we were at a Giant’s baseball game a week ago, and he talked about walking passed the bacon wrapped hot dog stand (where the line was so long he didn’t get one) or I can just fess up and admit to enjoying a hot dog now and then. And bacon, I love bacon!!
A few years back I had a friend help me out when I was hosting a dinner party. I say “dinner” in the loosest of ways, because actually it was a grazing style, lots of appetizers and hor d’oeuvres party. I made a few things, she made a few things, and together we cooked all day. We had as much fun prepping as I did at the party! Anyways, one of her recipes was a huge hit and I knew I needed the recipe. Thankfully she gladly shared it with me and I’ve made these Peppered Pork Sliders w/Caramelized Onions many times since then. Isn’t that really what recipes are all about? Sharing them with family and friends and hopefully handing them down for generations to come.
When you think of a BLT, do you think of a coffee shop sandwich? Toasted white bread with a little mayo, a slice of tomato, some lettuce, and two pieces of bacon? Yes, me too!
Don’t you just love it when your leftovers taste as good (or better) than the first time around?? I do. And, I love having a use for just a bit of leftover. In this case I was using up a bit of cooked chicken that I took out of the freezer. I made a BBQ pizza, but still had just enough left to make a delicious lunch. I’m sure you’re going to get tired of me, but I’m going to preach all day about pre-cooking some chicken and sticking it in the freezer. There are so many uses for it and it will simplify your kitchen life.
In the past, I’ve always made a curried chicken salad, but I love grapes in my curried salads, and since I had no grapes, I thought I’d keep it basic. But, I didn’t want blah, so I spiced it up with a little Sriracha.
My Chicken Salad is very basic, which is really perfect, because it allows you to add in whatever you like in yours. Or leave out an ingredient, that’s okay too.
If you live in Santa Cruz, or even if you’ve visited, you probably know of The Bagelry. They’ve been in business since 1977, serving their bagels and delicious spreads in three locations in town.
I have so many memories of taking the girls there when they were younger. It was one of the places where we could grab a “quick bite” and no one ever complained about it. I always got a sesame bagel with tuna salad on one half and egg salad on the other. The girls ALWAYS wanted “The Duke.” I say wanted, because they didn’t always get it. If we were in a hurry, running between pick-ups and drop-offs, we would occasionally be eating in the car. Well, let me just say, that The Duke is messy! And no amount of wipes were ever enough!
To this day, our girls still love “The Duke.” They make them at home and when they’re in town, still want to go to the Bagelry.

I was torn between this Thai Peanut Chicken Wrap or a Mango Salsa variation. Certainly wraps are very versatile and you can’t go wrong either way! And, they’re a perfect way to use up leftover chicken!!
