And, not only is it quick to make in the Instant Pot, if you prefer, the recipe is easily adaptable for making in a slow cooker or even stovetop. I&#8217;ve never felt intimidated by it, I just felt like I didn&#8217;t want or need another small kitchen appliance (although it&#8217;s actually quite large). However, I&#8217;m loving it for making soup, especially when I need to cook the chicken. This recipe has about a 30 minute cook time, and that doesn&#8217;t include to coming up to pressure. So, for an Instant Pot recipe, it isn&#8217;t the quickest.</p>
<h4>If it&#8217;s not the quickest IP recipe, why should I use my IP for this recipe?</h4>
<ul>
<li>It would take at least 2-3 times longer on the stovetop and approx. 8 hours in a slow cooker (on low temp).</li>
</ul>
<p>Some days, I <del>want</del>&nbsp;need hearty, delicious, and quick, and this soup didn&#8217;t disappoint! In fact, I made it twice, just to make sure we really loved it before I shared it.</p>

<h4>Aren&#8217;t there a lot of calories in heavy cream?</h4>
<ul>
<li>For those of you that are concerned about too many calories in a cream soup, you can easily substitute half or all of the heavy cream with half &amp; half or whole milk. I actually used 1 cup heavy cream and 1 cup 1/2 and half both times I made it. It was still very rich, creamy and delicious. Next time I&#8217;ll be trying it with cream and milk, which will cut the calories and fat a bit more.&nbsp;</li>
</ul>
<p>I love the Grandma&#8217;s Egg Noodles, and find them in the freezer section of Nob Hill. They&#8217;re a very thick noodle, which I love in a chicken soup, because they hold up well. Any egg noodle can be used in this Instant Pot Creamy Chicken Soup.&nbsp;</p>
<p>The recipe is as simple as:</p>
<ul>
<li>Cook the chicken, chopped veggies, spices, and chicken broth in the IP.</li>
<li>Remove chicken and shred.</li>
<li>Add in flour/broth mixture to thicken soup.</li>
<li>Stir in cream.</li>
<li>Switch IP settings to saute feature and bring to a boil.</li>
<li>Add chicken and noodles, and cook until noodles are tender.</li>

<p>This Holiday Vegetable Hash from Trader Joe&#8217;s was the inspiration for this soup. I realize this is a seasonal item at TJ&#8217;s, but the ingredients are simple and you can certainly chop and season the veggies to make your own.&nbsp;</p>
<ul>
<li>Butternut Squash</li>
<li>Sweet Potato</li>
<li>Red Onion</li>
<li>Celery</li>
<li>and, parsley, sage, and rosemary</li>
</ul>
<p>You&#8217;ll notice the veggies are a pretty small dice, but honesty, it just doesn&#8217;t get much easier!</p>

<p>To cook in an Instant Pot:</p>
<p>•Heat saute mode on high, add olive oil and heat. Add sausage. Cook (crumbling as it cooks) until golden brown.</p>
<p>•Add in veggie hash, fresh garlic, salt, pepper, and Italian seasoning, Continue to cook until veggies are just starting to soften (3-4 minutes).</p>
<p>•Turn off saute mode and add diced tomatoes, chicken broth, cannelinni beans, and dry pasta.</p>
<p>•Cook on manual pressure for 3 minutes. Quick release and remove lid.</p>
<p>•Serve topped with parmesan cheese.&nbsp;</p>

There&#8217;s just something about dunking the grilled cheese into the soup that my husband loves.</p>
<p>Let&#8217;s talk about how simple this is to make. I made this in my Instant Pot, but you could easily do it on your stove. Follow the same recipe, but instead of pressure cooking for ten minutes, I&#8217;d simmer it for 20-30 minutes giving the flavors time to meld together. Either way you decide to make it, I&#8217;m sure you&#8217;re going to love how quick, easy, and delicious this Marinara Tomato Soup is!! &nbsp;</p>
<p>With the exception of maybe the veggies (celery, onion, &amp; carrot), I always have the others in my pantry, making this a go-to recipe that I can pull together just about any night of the week.</p>

<p>Rotel tomatoes (even the mild) have a kick to them, so if your family doesn&#8217;t do spicy, I recommend using a regular can of diced tomatoes.</p>

Looking to make one that I&#8217;ve had plenty of times, but have never made, I decided on the Potato Corn Chowder. My husband and I both loved it and I know that I&#8217;ll be making it again soon! We enjoyed ours one night with a grilled cheese sandwich, another with a side salad, and once with just a warm crusty dinner roll. New England Clam Chowder&nbsp;is typically made with chopped clams&nbsp;and diced potatoes, in a mixed cream and milk base, often with a small amount of butter. <p>It was easy to find a lot of Potato Corn Chowder recipes by googling and also on Pinterest. When I&#8217;m looking for a new recipe to make, I use those sources, plus flip through my dozens of cookbooks. I usually find a couple that I know will be good recipes and adapt it to make it my own. A little more of this, and a little less of that and I&#8217;ve created a chowder that we love!&nbsp;<img loading="lazy" decoding="async" class="aligncenter size-full wp-image-4823" src="https://www.joyineveryseason.com/wp-content/uploads/2018/10/Corn-Chowder-2.jpg" alt="Potato Corn Chowder" width="680" height="952" srcset="https://www.joyineveryseason.com/wp-content/uploads/2018/10/Corn-Chowder-2.jpg 680w, https://www.joyineveryseason.com/wp-content/uploads/2018/10/Corn-Chowder-2-214x300.jpg 214w" sizes="auto, (max-width: 680px) 100vw, 680px" />I know you&#8217;re probably thinking that chowder is too &#8220;full fat.&#8221; It might be if you are truly on a dairy restricted diet, but this recipe makes a huge pot of soup, so please, don&#8217;t let the two cups of milk and cup of cheese sway you from making this&nbsp;Potato Corn Chowder. Yes, there is plenty of dairy, but the base of the soup is broth, so per serving it&#8217;s not much (remember it makes a big pot of soup).</p>

I grew up in a generation of &#8220;cooking from scratch&#8221; and really hope that you all aren&#8217;t giving in to all the grocery store conveniences. By all means, I don&#8217;t cook everything from scratch and admit to taking plenty of shortcuts (such as the beef stock I used in this soup), but I do encourage homemade meals whenever possible.</p>
<p>My <a href="https://www.joyineveryseason.com/main-dishes/bbq-spice-blend/" target="_blank" rel="noopener noreferrer">BBQ Spice Blend</a>&nbsp;was the perfect seasoning for this soup, but you can certainly use any bbq blend or simply make up a quick blend of your favorite spices (salt, pepper, garlic powder, onion powder, paprika, chili powder).</p>

But, it was so rich and delicious without any toppings, that I decided that a bit of fresh grated parmesan was all it needed.</p>
<p>Who knows, next time it might become &#8220;cheeseburger&#8221; soup. What toppings would you add to this soup?</p>

Stir to combine and cook for 4-5 minutes.</div></li><li id="wprm-recipe-5560-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add diced tomatoes, beef broth, water, BBQ spice, oregano, and cayenne pepper. <p><span id="more-2961"></span>I seriously don&#8217;t even know where to begin with these recipes. There&#8217;s everything from breakfast to dinner, sauces and snacks, homemade tortillas and popsicles. Some of the recipes are what I consider to be fairly authentic, others a little less so. All of them delicious!</p>
<p>Above ^^ you find <a href="http://www.meatloafandmelodrama.com/pollo-fundido-cups/" target="_blank" rel="noopener">Pollo Fundido Cups</a> (top left) from Meatloaf and Melodrama. I can&#8217;t wait to give these a try, they look &amp; sound like the perfect &#8220;little&#8221; mexican dish! I can see them served as an appetizer, or even as a main dish along with a side <a href="https://www.joyineveryseason.com/salads/caesar-salad/" target="_blank" rel="noopener">Caesar Salad</a>. Top right, you&#8217;ll find my <a href="https://www.joyineveryseason.com/main-dishes/beef-and-bean-baked-burritos/" target="_blank" rel="noopener">Beef &amp; Bean Baked Burritos</a>. Seriously folks, I&#8217;m not kidding you when I say these are the best homemade burritos! I make them all them time now, and the best part is that you make them with leftover steak (or chicken) and <a href="https://www.joyineveryseason.com/main-dishes/homemade-refried-beans/" target="_blank" rel="noopener">Homemade Refried Beans</a>. Bottom left, you&#8217;ll find some tasty looking <a href="http://www.asweetpeachef.com/bread/homemade-tortillas/" target="_blank" rel="noopener">Homemade Flour Tortillas</a> from A Sweet Pea Chef. I&#8217;ve yet to try making homemade tortillas, but I guarantee that I&#8217;ll be making them soon. Very very soon! Seriously, how good do those tortillas look? Bottom right ^^ check out the <a href="http://www.strawberryblondiekitchen.com/healthier-oven-baked-tacos/" target="_blank" rel="noopener">Healthier Oven Baked Tacos</a> by Strawberry Blondie. These are sure to please all taco lovers!</p>
<p>Below, check out the sandwich brought to you by Karen&#8217;s Kitchen Stories. Karen is truly a crazy lady when it comes to homemade bread and puts me to shame. This&nbsp;<a href="http://www.karenskitchenstories.com/2015/05/cemita-poblana-with-pork-milanesa.html" target="_blank" rel="noopener">Cemita Poblana w/Pork Milanese</a>&nbsp;is layered with flavors from the bottom bun to the top! If you&#8217;re&nbsp;looking to start your day, the Mexican food way, you need to check out these <a href="http://whatagirleats.com/easy-huevos-rancheros/" target="_blank" rel="noopener">Huevos Rancheros</a> from What a Girl Eats. I&#8217;m a huge fan of Huevos Rancheros,&nbsp;especially when enjoying breakfast&nbsp;on the beach in Cabo San Lucas. Tracy from Served From Scratch, shared her <a href="http://www.servedfromscratch.com/chicken-fajita-burrito-bowls/" target="_blank" rel="noopener">Chicken Fajita Burrito Bowl</a> with us. You need to check out, not only this recipe, but her entire list of recipes. Just as you would expect from he name of her site, she makes everything from scratch. Her blog&nbsp;is definitely one of my &#8220;go-to&#8217;s.&#8221; I mentioned my <a href="https://www.joyineveryseason.com/main-dishes/homemade-refried-beans/" target="_blank" rel="noopener">Homemade Refried Beans</a>&nbsp;when I talked about my Beef &amp; Bean Baked Burritos. I&#8217;m here to say, that once you make them from scratch, you won&#8217;t be opening a can of beans again. And lastly, in this photo collage, are <a href="http://themissinglokness.com/2015/06/03/paletas-de-fresas-mexican-strawberry-popsicles/" target="_blank" rel="noopener">Paletas de Fresas (Strawberry Popsicles)</a>. Oh my sweet goodness! Right? Strawberries, milk, cream, and a little sugar and you&#8217;ve got yourself a homemade popsicles that everyone is going to love.</p>

Nothing beats a large hot bowl of Tortilla Soup with all the toppings!&nbsp;Like Mother Like Daughter shared their <a href="http://lmld.org/2012/02/01/crockpot-chicken-tacos/" target="_blank" rel="noopener">Crockpot Chicken Tacos</a>, and if you ask me, there is nothing better than a crockpot meal. Some days are just too busy to cook, and these tacos are sure to please the entire family after a busy day. And, if you&#8217;re looking for something a bit lighter, try&nbsp;this <a href="http://glutenfreefoodsmith.com/2016/03/taco-tuesday-salad/" target="_blank" rel="noopener">Taco Salad</a>&nbsp;from Gluten Free Foodsmith. It looks delicious! Now that the weather is summer-like, we&#8217;ll be enjoying this soon (eating out on the deck of course).</p>

I think I know what I&#8217;m making next weekend <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /> I recently made up a batch of <a href="https://www.joyineveryseason.com/sauces-and-gravy/enchilada-sauce/" target="_blank" rel="noopener">Homemade Enchilada Sauce,</a>&nbsp;but headed out of town and ended up by placing it in the freezer. I can&#8217;t wait to get home and make up a big pan of chicken enchiladas. Luckily, I think I have enough sauce to also make a delicious meal of chilaquiles. Talking about enchiladas, these <a href="http://www.organizedisland.com/easy-chili-verde-enchiladas/" target="_blank" rel="noopener">Enchilada Verdes</a>&nbsp;from Organized Island have been calling my name since I first set eyes on them. Have you ever gotten corn on the cob at the fair? It is seriously the best, but it&#8217;s so messy to eat! I decided to re-create it, and make it easier to enjoy. And enjoy it you will! It&#8217;s got all the great flavors: roasted corn, cheese, lime, but it&#8217;s simple to eat!d I hope you&#8217;ll give my <a href="https://www.joyineveryseason.com/side-dishes/fair-corn-in-a-cup/" target="_blank" rel="noopener">Fair Corn</a> a try!</p>

The Seasoned Mom used a&nbsp;purchased enchilada sauce, and just a few other ingredients for this quick and easy meal. I wonder how it will taste with&nbsp;my homemade <a href="https://www.joyineveryseason.com/sauces-and-gravy/enchilada-sauce/" target="_blank" rel="noopener">Enchilada Sauce</a>? Shrimp is a popular ingredient in Mexican food, and these <a href="http://www.thatsquareplate.com/chipotle-lime-shrimp-tostadas/" target="_blank" rel="noopener">Chipotle Lime Shrimp Tostadas</a> from The Square Plate certainly has done these right. Shrimp and lime and chipotle? Yes please! Show Me the Yummy shared her <a href="http://showmetheyummy.com/easy-pico-de-gallo-recipe/" target="_blank" rel="noopener">Pico de Gallo</a> with us, and I have no doubt that it truly is yummy! And lastly, but certainly not least is <a href="http://www.onionringsandthings.com/2015/08/pork-chili-verde/" target="_blank" rel="noopener">Pork Chili Verde</a> from Onion Rings and Things. 										<content:encoded><![CDATA[<p>French Onion Soup is such a simple, yet flavorful soup, full of caramelized onions, topped with a thick slice of toasted french bread, then topped with a mound of Gruyere cheese until it&#8217;s melted and golden. It&#8217;s pretty much a cup of deliciousness! He seems to think it&#8217;s a &#8220;fancy restaurant&#8221; kind of soup. In reality, it&#8217;s made from such simple ingredients. It does however take about an hour and a half to make. You want to give the onions time to caramelize slowly, so they become creamy and sweet. After that&#8217;s done, it&#8217;s as simple as adding some broth along with a few other pantry ingredients and let it simmer for about 20 minutes. Right before serving, toast some bread, grate some cheese and place under the broiler. Make sure to use a broiler proof soup bowl. If you don&#8217;t have one, you can toast the bread on a baking sheet, top with cheese&nbsp;and place under the broiler. Typically, I would have served it with a side <a href="https://www.joyineveryseason.com/salads/caesar-salad/" target="_blank" rel="noopener">Caesar Salad</a>&nbsp;for the perfect soup/salad combo.</p>

<div id="recipe-5644-instructions" class="wprm-recipe-instructions-container wprm-recipe-5644-instructions-container wprm-block-text-normal" data-recipe="5644"><h3 class="wprm-recipe-header wprm-recipe-instructions-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none" style="">Instructions</h3><div class="wprm-recipe-instruction-group"><ul class="wprm-recipe-instructions"><li id="wprm-recipe-5644-step-0-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Melt butter over med/low heat in heavy stock pot.</div></li><li id="wprm-recipe-5644-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add onions and cook, stirring often, until soft and caramelized, for approx. 30-40 minutes.</div></li><li id="wprm-recipe-5644-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add garlic, bay leaves, salt, and pepper and continue to cook for another 10-15 minutes.</div></li><li id="wprm-recipe-5644-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Stir in flour and cook for 10 minutes.</div></li><li id="wprm-recipe-5644-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Remove from heat, stir in wine.</div></li><li id="wprm-recipe-5644-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Place pot back over med heat, add beef &amp; chicken stock, and worcestershire sauce. Bring to low boil, then reduce to simmer.</div></li><li id="wprm-recipe-5644-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Once soup is simmering, slice bread into 3/4" slices and place on sheet pan. Bake for 10-15 minutes, turning over to toast both sides.</div></li><li id="wprm-recipe-5644-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Grate cheese and set aside.</div></li><li id="wprm-recipe-5644-step-0-8" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Ladle soup into broiler proof bowls and top with toasted bread slice. Top with a mound of grated cheese and place under broiler until cheese is melted and begins to brown.</div></li><li id="wprm-recipe-5644-step-0-9" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Use caution when removing hot bowls from broiler.</div></li></ul></div></div>

I was only missing one ingredient that I had to add to my shopping list. Fresh ginger. I knew I could substitute ground ginger, but there is just something about the taste of fresh ginger. I&#8217;ll freeze the rest of the ginger root for another time.</p>
<p>As you can tell by the color of the soup, I used the light (or white) sweet potatoes. I prefer them to the dark orange sweet potatoes, so if they&#8217;re available, I always go white. Looking at this white bowl of soup, in hindsight, the orange potatoes sure would have made for a prettier photo. Oh well, the flavor was there! A topping of fresh cilantro or parsley is optional, but I had to add a bit of color <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>

Stir.</div></li><li id="wprm-recipe-5674-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add in water and coconut milk and continue to cook over med heat until potatoes are tender.</div></li><li id="wprm-recipe-5674-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Remove from heat.</div></li><li id="wprm-recipe-5674-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Using a food processor, in batches, puree the potato mixture until smooth. I hope some day to meet her! &nbsp;As soon as she posted her <a href="http://anitalianinmykitchen.com/italian-lentil-soup/" target="_blank" rel="noopener">Italian Lentil Soup</a>, I knew I needed to make it. And, oh my gosh, you need to head over to her site. Besides her inspirational lentil soup, she posted a picture of her mother-in-law, sitting outdoors picking olives. They say a picture is worth a thousand words, and that one truly is!!</p>
<p>I had just about everything I needed to make a variation of her soup, except for the lentils. A quick run to the store for some lentils and zucchini and I was home pulling out my grandma&#8217;s big soup pot. Ok, it wasn&#8217;t really a quick run to the store, to be 100% honest, I got a little detoured. I stopped at Starbucks, picked up a few Christmas ornaments (70% off) at one of my favorite little boutiques, and got a pedicure. Fortunately this is a really quick cooking meal, but with a flavor of a soup that has simmered all day.</p>
<p>I used chicken broth, since it&#8217;s what I had in my pantry, but by switching to veggie broth, you&#8217;ve got yourself a healthy, delicious, and hearty vegetarian meal.</p>

										<content:encoded><![CDATA[<p>I&#8217;m so glad it&#8217;s finally cool enough weather to be thinking of soup. Lots and lots of soup! My husband and I both love soup! And, more often than not, my husband loves crackers crumbled in his soup. I credit a local coffee shop on our wharf here in Santa Cruz, for his love of crackers. With your chowder (or if you&#8217;re a little one) you still get a little bag of Oyster Crackers. You know, like Saltines, only they&#8217;re little round crackers. They don&#8217;t need crumbling into the soup and float perfectly! Call my husband crazy, but he loves them!</p>
<p>So, taking inspiration from the Pioneer Woman and her Seasoned Buttery Crackers, I thought I&#8217;d &#8220;Soup&#8221; Up some of my husband&#8217;s favorite crackers.</p>

Forget about floating them in your soup bowl, how about just grabbing a handful and eating them as a snack? They&#8217;re that good!</p>

Then bake them slowly until they are just lightly golden brown.</p>
